Baking with me: Beignets

INGREDIENTS:

  • 1/2 cup of Room-temperature water

  • 1/2 cup of Room-temperature milk

  • 2 teaspoons of yeast

  • 2 tablespoons of melted butter

  • 1 egg

  • 1 teaspoon of vanilla extract

  • 1/4 cup of granulated sugar

  • 4 cups of all-purpose flour

  • 2 teaspoons of salt

  • Powdered sugar (for topping)

Caramel Drizzle:

  • 1 can of sweetened condensed milk

  • 1 teaspoon of brown sugar

  • 2 teaspoons of butter


INSTRUCTIONS:

  1. Mix together water and milk in a medium-sized bowl and sprinkle on top the yeast. Let sit until the yeast is foamy, about 5 minutes

  2. Whisk in the butter, egg, and vanilla extract until combined

  3. Mix in the sugar, flour, and salt and combine into a dough

  4. Knead the dough with your hand for a few minutes (about 2-3 minutes).

  5. Place dough into a greased bowl, cover, and let rise in a warm area for about 1 hour.

Once risen, push out the dough with your hand and cover again and put into the refrigerator overnight or

up to 2 days

6. Next day: Pour some vegetable oil (or canola oil) into a frying pan. You just need enough to cover the dough, so

not that much. Heat up the oil to about 360 F

7. While waiting for oil to heat up, place dough onto a clean, floured surface and roll out into a 14" x 10"

rectangle. Cut along the edges to make it into a near-perfect rectangle

Cut the dough into even squares. I had about 7 columns and 4 rows

8. Once oil is hot enough, place a few dough squares into the frying pan, making sure you are not crowding the

pan. You can flip them around, when the bottom side is lightly brown, so about 10-20 seconds

9. Once both sides are fried, place them onto a plate that is covered with a paper towel just to let some of the oil

drip off of the beignets.

10. Fry the remaining beignets.

Caramel Drizzle:

1. In a saucepan over medium-low heat on the stovetop, mix together all the ingredients and whisk constantly.

Mixture will start to bubble, which is alright. Cook until it is a light/dark shade of brown.

2. Turn off heat and place the caramel in a mason jar right away.

3. To make into a drizzle, mix together a tablespoon of caramel and 2 teaspoons of milk in a small bowl and put as

much or as little caramel and milk as you would like to get it to the consistency that you want.

Shake some powdered sugar on top of the beignets drizzling some caramel on as well, and enjoy!


NOTES:

You do not have to make the caramel drizzle. The beignets are not that sweet so I do find the caramel drizzle a nice addition. Let me know if you made it and what you thought of it! If you would like a visual step-by-step hop onto my Instagram page!
